Circassian cheese is a traditional soft cheese
from the North Caucasus and is popular among the Circassian diaspora
in the Levant and other regions. It's known for its mild flavour and unique
texture that doesn't melt when baked or fried, making it ideal for various
culinary uses. This cheese can be enjoyed fresh or after being sun-dried or
oven-dried, and a smoked variety adds a distinctive flavour to
dishes. The Caucasus region is renowned for its diverse
and flavorful cheeses. Circassian cheese (Adigeiskii) is typically made from raw cow, sheep, or goat milk
and is often moulded into a wooden basket for shaping.

Circassian smoked cheese (smoked Asigeiskii)
The Circassian (Adigeiskii) smoked cheese is a smoked low-fat cheese, specially produced in the
eastern Marmara region of Turkey. It has a light yellow or cream-colored
appearance with a thick crust. After curdling and straining, the cheese is
salted and then smoked using cherrywood in smoking rooms. This process enhances
its flavour and extends its shelf life.

ripening, or crème de Fromage, a recipe that mellows cheese into a
paste. Some examples of spreadable cheeses are cream cheese, Ricotta,
Mascarpone, Chevre, Stracciatella, and Labneh. Spreadable cheeses often
